Creamy Beer & Potato Soup

Obviously this recipe orig called for chicken boullion, but I saw no reason why a vegetarian version couldn't taste just as good, so veggie substitutions are included in this recipe. I love having soup parties, and I think the easy prep for this recipe makes it a terrific choice to serve as a buffet dish at an evening St. Patrick's Day party.

In a saucepan, saute the garlic in butter for about a minute, then add the vegetables and saute for a further 5 minutes until tender.

Add the potatoes and beer. After it has boiled, mash the potatoes into the side of the pot.

Add in the sugar and boullion. Season to your taste.

Pour in the cream while mixing. Let it simmer for a few minutes then serve piping hot!

Ingredients

32 oz. Beer (Guinness)
6 Yukon Gold potatoes, peeled or not as you choose , diced
4 cups pouring cream or Silk Unflavored soy creamer
4 onions (chopped finely)
1 celery stalk (Diced)
2 tbsp. butter
1 tbsp. sugar or sucanat
1 tbsp chicken or vegetarian boullion
1 tsp. chopped garlic
Salt & Pepper

Sucanat is basically dehydrated sugar cane with little to no processing, making it an excellent source of iron, calcium, vitamin B6, potassium and chromium, which helps balance blood sugar.
