Glazed Corned Beef

East meets West in this Asian-glazed corned beef recipe, a homestyle favorite fused with tangy-sweet flavors, the combiation of which pleases just about all of the taste buds! This recipe is a perfect main course for a small dinner with family or friends and is a terrific choice to serve as a buffet dish at an evening St. Patrick's Day party. Wonderful paired with Colcannon (Irish Potatoes & Greens).

Preheat oven to 350 degrees. Spray a large glass baking dish with non-stick cooking spray. Rinse corned beef and place in prepared baking dish. Add water, then cover tightly with aluminum foil and bake for about 2 hours. Remove from oven, and drain out the liquid.

In a small bowl, mix together the apricot preserves, brown sugar, mirin, and soy sauce. Spread the apricot mixture evenly over the corned beef.

Bake uncovered at 350 degrees for 25-30 additional minutes, or until meat is tender, basting occasionally with pan juice.

Slice corned beef across grain to serve. Serves 6

4 1/2 lbs. corned beef
1 c. water
1 c. apricot preserves
1 tsp. mirin
1/4 cup brown sugar
2 Tbsp. soy sauce
1/8 tsp. pepper
