Irish Stew
Irish
Stew is one of the most known of Irish country
dishes. Generally made with the cheapest and most available
ingredients (lamb meat, onions & potato) carrots are
thought not to have been part of the original ingredients
but they add add flavor, so they are included here. You
can also throw in some peas if you like. This simple,
yet delicious, traditional recipe for Irish Stew is a
perfect main course for a small dinner with family or
friends. It's also a low maintenance choice to use as
a buffet dish you can prepare & assemble
earlier in the day to reheat and serve at an evening
St. Patrick's Day party. Use corn starch or arrowroot
powder to thicken the gravy, if desired.

On med heat, in a stock pot,
brown lamb slowly in butter.
Add
onion and garlic and saute for 5 minutes.
Add
water or stock, salt and pepper, cover and cook for 15 minutes.
Add
potatoes and carrots, any other vegetables you are throwing
in, and the spice sachet. Simmer on med-low for 45 minutes.

2 lamb shoulders or legs, cubed
1 onion, sliced
3 cloves garlic, finely chopped
2 cups water (or beef stock)
1 tsp. salt
1/4 tsp. freshly ground black pepper
6-8 medium potatoes, quartered
3-4 carrots, cut horizontally into 2" pieces

1 tbsp. chopped parsley
1 tbsp. fresh thyme
1small sprig of rosemary
