Martin Yan's Chinatown Cooking: 200 Traditional Recipes from 11 Chinatowns Around the World

"The Chinatowns around the world are amazing communities," writes Martin Yan in his Chinatown Cooking, "filled with history, culture, friendship, and of course food." Naturally, in this companion book to his public television series, Yan focuses on the food--a rich stew from the world's Chinatowns, including, exotically, those in Singapore, Sydney, and Macao. The 200 recipes included reflect a profoundly rich food culture (or cultures, as Chinese cuisine is regionally diverse). Some dishes, like Steamed Whole Fish with Ginger and Green Onions and Sweet-and-Spicy Garlic Shrimp, are beloved classics; others, including Hawaiian Lu'Au Stew, mirror adjustments to local ingredients or tastes; while still others, such as Crispy Seafood and Mango Packets and Steamed King Prawns with Chinese Pesto, are the innovations of modern chefs. But old or new, the dishes are endlessly tempting, and, because of Yan's knowledgeable yet relaxed approach and the clarity of his recipes, completely manageable. While some recipes are classics, such as Broccoli Beef and Kung Pao Chicken, others blend traditional dishes with local ingredients for true Asian fusion cooking . Covering dishes from dim sum, appetizers, and soups, to meat and seafood specialties, rice, noodles, and even desserts like Lucky Treasure Rice Pudding, the book also profiles the Chinatowns, noting their unique qualities while also offering restaurant and dish recommendations .

Pan-Asian Grilled Steak Salad

Fresh herbs are so easy to grow, and nothing is better than finding innovative ways to cook with them. Asian food is one of my favorite cuisines, and Asian barbecue is always a treat in my house. Sometimes though, the lighter side of Asian BBQ is appreciated, and this salad recipe is perfect for a light, yet satisying meal in that vein. Fresh mint and Asian dressing complements grilled teriyaki steak in this main course salad BBQ recipe that's an easy grill recipe to make.

Prepare charcoal or gas grill.

On a plate, put 2 tbsp. of teriyaki sauce. add steak, turn to coat. Sprinkle steak with pepper and let stand for at least 10 minutes.

Meanwhile, in a small bowl, whisk peanut oil, lime rind and remaining 4 tsp. teriyaki sauce until blended. Season with salt and pepper to taste.

Transfer half of liquid to a medium size bowl, add shredded cabbage, red onion and mint. Toss well.

Remove leaves of baby bok choy and lightly brush each with sesame oil. Set aside.

Grill sirloin steak until cooked to desired doneness (5 minutes per side for a medium rare steak). Transfer steak to cutting board, or keep warm on upper grill rack.

Grill leaves of bok choy on very low heat, about a minute on each side.

Arrange bok choy leaves on the salad plate in a circle, ends meeting in the center, like the petals of a flower. Divide cabbage mixture in half and spoon into center of plate.

On a cutting board, slice steak into thin slices. Arrange on top of cabbage mixture. Drizzle remainder of dressing and any steak juices over each salad.

Serve immediately.
