Chamorro Style Bread Pudding with Fresh Bananas & Macadamia Nuts (Latiya)

Latiya is actually a popular dessert served in Guam, but because of its tropical ingredients this delicious bread pudding could easily pass for a Hawaiian bread pudding and is also a terrific choice to serve as a luau dessert recipe. After all, it is not Guam but Hawaii that is the macadamia nut capital of the world, growing 90% of the world's macadamia nuts. Besides being delicious, macadamia nuts are high in monounsaturated fatty acids (AKA as the “good” fat) and have been proven to help reduce overall cholesterol levels, and bananas are a rich source of potassium. I've never actually tried this, but based on my cooking instinct, which is pretty solid at this point, I'd bet using Hawaiian bread or banana bread would also work well in this recipe, which is a very easy bread pudding recipe to make.


Slice cake or bread into 1/2 to 3/4 inch slices and place onto serving platter that has a bit of a rim (to catch the sauce)

In a medium saucepan, scald the milk. While the milk is heating, combine egg yolks, cream, and sugar in a medium mixing bowl. Be sure to mix well. Once milk is heated, remove from heat and slowly add it to the egg yolk mixture whisking vigorously until well combined. Return the mixture to the saucepot and stir over medium heat. Sauce will start to thicken; keep going until sauce is thick enough to stick to the spoon.

Pour sauce over sliced cake or bread until each slice is completely covered. Place sliced bananas on top, sprinkle cinnamon and macadamia nuts for garnish.

Enjoy this dessert warm or refrigerate until ready to serve.

1 tsp ground cinnamon
