Ginger-Sesame Coleslaw

This Asian coleslaw recipe is a delicious side dish for an Asian barbecue, as well as a vegan barbecue recipe your vegan and vegetarian friends will appreciate. If you don't feel like taking time to prep all the vegetables, you can use a prepackaged coleslaw mix you can buy at your suprmarket instead. This recipe uses the same Ginger Sesame Vinaigrette dressing found in the Ginger Sesame Noodle Salad Recipe. Use about 1 tbsp ginger Sesame dressing for every cup of coleslaw.

To make vinaigrette:

Combine all ingredients in a small bowl or a jar with a lid.

Whisk to mix, or shake jar vigorously until well blended and sugar is dissolved.

To make coleslaw:

In a large bowl, combine all vegetables. Add cilantro if desired.

Add vinaigrette and toss to mix well. Top with peanuts, just prior to serving.
