Grilled Chicken Salad With Mangoes And Greens

Sometime summer eating needs to be light, and just because you are having a barbecue doesn't mean your meal needs to be heavy, fattening, or boring for that matter either! Fresh herbs are so easy to grow, and nothing is better than finding innovative ways to cook with them. Fresh thyme complements grilled chicken in this main course salad BBQ recipe that's simple to make, and low-fat too. Whenever possible, choose fresh thyme over the dried form of the herb since it is superior in flavor. The leaves of fresh thyme should look fresh, be a vibrant green-gray color, and free from dark spots or yellowing. I also prefer to use free range, hormone and antibiotic free chicken, which if you've never tried, will influence the taste of your dish quite a bit.

On a large plate, drizzle the chicken with 1 tablespoon of the oil.

Coat with the scallions, 1 teaspoon of the thyme, and salt and pepper to taste.

Turn to coat it well, and allow to marinate at room temperature, turning it once, for 30 minutes.

In a small bowl whisk together the vinegar, the shallot, the remaining thyme, and salt and pepper to taste. Add the remaining 4
tablespoons oil in a stream, whisking until mixture is emulsified.

Grill the chicken on an oiled rack set 5 to 6 inches over glowing coals
for 4 to 5 minutes on each side, or until it is cooked through. In a
large bowl toss the romaine, the watercress, the cabbage, and the mango with just enough of the vinaigrette to coat the salad well.

Transfer the salad to a platter, and top it with the chicken. Serve the remaining vinaigrette separately.

Ingredients

2 whole skinless boneless
-chicken breasts, halved
5 tbsp. olive oil
2 scallions; minced
2 tsp fresh thyme leaves
1 1/2 tbsp. white vinegar
1 shallot; minced
4 c. shredded romaine or mixed baby greens; rinsed and
spun dry
1 sm bunch watercress; coarse
stems discarded, leaves rinsed and spun dry
1/2 c finely shredded red cabbage
1 lg mango; peeled, pitted, and
cut into 1-inch pieces
