Vegetable Kabobs
w/ Sesame Ginger Marinade
Grilling
vegetable kabobs makes for a delicious, quick and easy
barbecue recipe, and is one vegetarians of course will
love. I always make at least one vegetarian BBQ recipe
for my friends who prefer not to eat meat, as well as for
guests who prefer to eat something lighter on a hot summer
evening. This grilled vegetable kabob recipe is not only
vegetarian (vegan, actually), but is also simple to make.
Using 2 skewers per kabob makes turning them easier. If
using wooden skewers, be sure they have soaked in water
for at least one hour, preferably overnight.

Circle Kabob Set
This
shapely kabob set runs circles around the average, stick-straight
skewer with a curve that allows them to fit snugly on any plate.
One end of these stainless steel skewers is sharp for piling
on the kabob ingredients, and the other end curves into an attractive
coiled handle. Great gift for your favorite chef or the owner

Ready
charcoal grill or preheat gas grill for 10 minutes.
Make
marinade. In a shallow glass bowl, whisk together all marinade
ingredients.
Add
vegetables and toss to coat. Let stand 30 minutes.
Thread
vegetables on skewers, alternating vegetables for color,
using two skewers per kebab. (Each skewer gets 3 red peppers,
3 yellow peppers, 2 mushrooms, 2 tomatoes, 2 zucchini and
2 yellow squash.)
Lightly
spray grill rack or pan with cooking spray. Grill kebabs
until tender, turning often until they are well marked (about
8 min). Brush often with marinade as you cook. Serve immediately,
putting out leftover marinade for dipping.

1/2 tsp. dried red pepper flakes
