Mojito-Mint Grilled Chicken

This grilled chicken recipe is based on the Mojito cocktail, a popular rum-and-mint drink from Cuba was the inspiration for this entrée. And why not? These tasty green concoctions are to Cuba what mint juleps are to the South. Using fresh mint and totally delicious, the mojito claimed even the celebrated American author Ernest Hemingway as a devotee, and this mint recipe will leave you a fan of the flavor too. Mint syrup is often shelved with the coffee and tea at the supermarket, but if you can't find it, here is a mint syrup recipe so you can make your own. Adding the grilled lime at the end adds some extra tang. Garnish with mint sprigs and grilled pineapple slices, if desired.

Whisk lime juice, 1/2 cup rum, and next 4 ingredients in bowl.

Place chicken in resealable plastic bag. Pour marinade over; seal bag. Turn bag to distribute marinade. Chill 4 hours, turning bag twice.

Place lime quarters in shallow bowl. Pour remaining 2 tablespoons rum over, tossing to coat. Let stand at room temperature.

Prepare barbecue (medium heat). Grill chicken until cooked through, about 15 minutes per side. Transfer to platter.

Grill limes until soft and slightly charred, about 5 minutes. Garnish platter with mint sprigs. Squeeze grilled limes over chicken and serve.

 


Ingredients

3/4 cup fresh squeezed lime juice
1/2 c. plus 2 tbsp light rum
1/2 c. finely chopped fresh mint
6 tablespoons mint syrup
1 tbsp olive oil
1 tbsp coarse kosher salt
6 chicken breast halves with skin and bones (about 5 pounds)
3 large limes, quartered lengthwise

Fresh mint sprigs, grilled pineapple for garnish
