Spaghetti
with Charred Tomato Sauce
Destem
tomatoes and cut lengthwise. Grill tomatoes on pan grill sprayed
with mesquite-flovored non-stick cooking spray until tomatoes
are lightly charred on both sides and tender. Remove from grill
and coarsely chop. Grill whol garlic cloves until charred, then
chop.
Combine
tomatoes and garlic in sauce pan. Stir in red wine, red pepper
and salt. Bring to a boil. Reduce heat, cover and simmer until
tomatoes cook into a sauce, about 15-20 minutes. Stir in basil
and oregano. serve over spaghetti. Sprinkle with cheese if desired.

pounds plum tomatoes
3 large cloves garlic
1/2 c. red wine
1/2 tsp. salt
1 tbsp fresh basil, minced
1 tbsp fresh oregano, minced
mesquite-flovored non-stick cooking spray
1/2 pound spaghetti or linguini, cooked & drained according
to package directions)
Parmesan Cheese (optional)
NOTE:
Sweet Italian basil is the basil most people are familiar
with, but
lemon basil would also be excellent in this recipe.
