Here's a recipe for your own divine revelation--a rich, creamy, decadently Chocolate Fondue Experience that's an easy to make, perfectly romantic recipe for a dessert encounter to remember.

Sift the cocoa into mixing bowl and set aside. Place the water, sugar, and corn syrup into a pot and bring to a boil.

Allow to simmer for 10-15 minutes (sugar solution should reduce by about 30%)

Pour the cocoa powder into the solution and whisk until powder is completely blended and the mixture is smooth.

Return the chocolate mixture to the stove (keep on medium heat). Add heavy cream or soy creamer, bring to boil and simmer for an additional five minutes.

Remove from heat. Stir in chopped chocolate. Take a taste (You know you're dying to!!!) Pour into fondue pot to keep warm. Arrange bread and fruit on an attractive platter. Serve.

Ingredients

1 cups cocoa powder, sifted (see note below)
1 1/4 cups spring water
1 1/2 cups granulated sugar or Sucanat
1/4 c. corn syrup or brown rice syrup (see note)
1/2 c. plus 5 tbsp. heavy cream or Silk Soy Creamer
5 oz. premium semi-sweet chocolate, chopped (see note)
french baguettes (cut into bite sized pieces) or dessert crepes
fruit (strawberries are my favorite), cut into bite sized pieces

Makes approx. 6 servings.

What you cook is only as good as its ingredients, so what kind of cocoa & chocolate you use matters! I recommend you using organic or premium brands like Valrohna or ScharffenBerger), available at Whole Foods-like places or via mail order (Amazon) below:

5 lbs. Dagoba Organic Cacao
1 lb. Frontier Organic Cacao
8.8 oz Valhrona Cocoa Powder

Sucanat is basically dehydrated sugar cane with little to no processing, making it an excellent source of iron, calcium, vitamin B6, potassium and chromium, which helps balance blood sugar. Malitol is a bit more expensive, but is a little less sweet than actual sugar. What's nice about Sucanat is you can use in a 1:1 ratio wherever you'd use sugar. It's the same kind of reason why the brown rice syrup is better for you than the corn syrup you can read about it here.)
