Early
in the day, salt the sliced eggplant, and place on paper towels.
Let stand for at least 2 hours, the longer the better. When
ready to use, quickly rinse each slice then pat dry to remove
as much liquid as possible.
Place 2 tbsp butter & 4 tbsp. olive oil in a large frying
pan over a fairly high flame |
