Hibiscus
Preserve
Cover petals with lemon juice and microwave on high for 4 minutes.
Add boiling water and sugar and stir well. Cook 2 minutes then
stir. Cook another 2 minutes, stir and then cook for an additional
2 minutes. Allow mixture to cool for about 1 hour. Once cool,
cook for 4 minutes then stir. Cook for 2 more minutes and stir.
Cook 2 minutes more and stir. Let cool slightly and pour into
a sterilized jar. Refrigerate before using.

Ingredients

large hibiscus flowers (petals only, finely chopped)
1/4 cup of lemon juice
1/2 cup of boiling water
2 cups of sugar
or Sucanat
NOTE:
This
recipe produces a rich red spread that has a consistency similar
to honey. Its unique flavor makes it delicious on toast or
breakfast scones. Can also be used as a glaze for vegetables
or poultry and if diluted with white vinegar, is a fine addition
to sauces and marinades.
