Nothing says romantic dessert more than chocolate. Comfort food at its best, this chocolate cake recipe could not be any easier to make, so even non-chefs craving sweets can handle this chocolate dessert recipe with no problem!

Valentine's Day Dessert Recipes

Preheat oven to 350 degrees F.

Prepare the cake pan as directed on the cake box.

Prepare chocolate cake batter according to package instructions and pour into the prepared pan.

In a bowl combine ricotta cheese, sugar and vanilla extract; mix until thoroughly combined. Pour over the cake batter. Swirl through the batter with a knife. Bake for 1 hour.

Meanwhile, combine instant chocolate pudding mix and nondairy whipped topping.

Beat with an electric mixer on medium speed until smooth.

Chill until the cake has cooled, then frost.

1 (18.25 oz.) box chocolate cake mix
1/3 c. vegetable oil
3 eggs
4 c. ricotta cheese
1 c. granulated sugar or Sucanat
1 tsp. vanilla extract
1 (3 1/2 oz.) box instant chocolate pudding mix
8 oz. nondairy whipped topping, thawed

Sucanat is basically dehydrated sugar cane with little to no processing, making it an excellent source of iron, calcium, vitamin B6, potassium and chromium, which helps balance blood sugar. Malitol is a bit more expensive, but is a little less sweet than actual sugar. What's nice about Sucanat is you can use in a 1:1 ratio wherever you'd use sugar.
