Georgia Peach Eggnog

Hot Toddies : Mulled Wine, Buttered Rum, Spiced Cider, and Other Soul-Warming Winter Drinks

Combine pudding mix, sugar and 1/4 cup milk in a 2-quart saucepan. Add slightly beaten egg yolks and blend well. Cook over medium heat, stirring until mixture comes to a full boil, about 10 minutes, then cool.

Beat egg whites until stiff peaks form. Fold into cooled pudding mixture. Add vanilla extract and brandy. Chill several hours.

Just before serving, whip cream and spoon onto eggnog. Sprinkle with nutmeg.

Serves 12.

Ingredients

1 small box vanilla pudding and pie filling mix (regular)
1/2 c. granulated
sugar or sucanat
1 quart milk
3 egg yolks, slightly beaten
3 egg whites, slightly beaten
1 teaspoon vanilla extract
1/4 c. peach brandy, to taste
1 c. whipping cream
Nutmeg

Sucanat is basically dehydrated sugar cane with little to no processing, making it an excellent source of iron, calcium, vitamin B6, potassium and chromium, which helps balance blood sugar. Malitol is a bit more expensive, but is a little less sweet than actual sugar. What's nice about Sucanat is you can use in a 1:1 ratio wherever you'd use sugar.
