powdered sugar while still warm, this shortbread-like cookie
is easy to make, which might explain why it' such a world-wide
favorite, traditionally served at weddings, Christmas,
and other festive occasions. It has many aliases, and is
also known as a Mexican Wedding Cake, an Italian Butter
Nut, a Southern Pecan Butterball, a Snowdrop, a Viennese
Sugar Ball or a Snowball. Once they are completely cooled,
cookies may be stored in airtight containers for up to
1 week.
In a large bowl combine ingredients with mixer
(low speed) about 1 minute until well blended. Gradually add
flour at low speed until just combined; stir in nuts. Roll
dough into 1 inch balls; place about 1 inch apart on ungreased
cookie sheet. Bake at 350 F for 8-10 minutes until firm to
the touch but not brown. Do not overbake. While warm, roll
in powdered sugar. Cool; re-roll in powdered sugar before serving.
