Salmon with Fresh Dill
Preheat oven to 375 degrees.
In
a small saucepan, heat 2 tsp. olive oil and saute onions, When
onions begin to soften, add wine, parsley, salt & pepper
and simmer gently for 4 minutes. add dill and simmer an additional
minute. Remove pan from heat.
Lay
4 pieces of aluminum foil, each 2 1/2 times the width of each
fillet. Brush foil with remaining olive oil (use paper towel
or wax paper if you don't have a brush). Lay out fillets. Spoon
onion-herb mixture on each fillet. Fold foil over fish and crimp
ends together to make a packet. With fork, pierce packet to
make several holes. Bake in oven on a baking sheet for 25-30
minutes. To serve, slit open each packet and remove to serving
plate, keeping herb mixture on top. Serve immediately with lemon
wedges.

2 tbsp. fresh dill, minced

4 6-7 oz. salmon fillets or steaks
1 tsp. salt
1/2
tsp. pepper
1 large lemon, quartered
