Spicy
Fried Tofu
with Basil
Heat
wok or large skillet over high heat. Add oil and when hot, add
garlic and chilies and stir-fry 2-3 minutes. Add tofu and stir-fry
about 2 minutes. Add soy sauce and sugar and mix well. add beans
and cook just until bright green, about 1-2 minutes more. add
basil and mix thoroughly. Serve hot.

Ingredients
1 tbsp. veg. oil
4 garlic cloves
2 small fresh red or green chili peppers, seeded & minced
1 lb extra-firm tofu, drained, cut into 1 inch cubes
1 tbsp. tamari/soy sauce
1/2 c. fresh basil, chopped
1/2 pound fresh green beans, (trimmed and cut into 1/2 inch
pieces)
1 tsp. sugar
NOTE:
Press
tofu with paper towels to remove as much packing water moisture
as possible. This makes room for the tofu to absorb whatever
marinade you are using, and you'll be shocked at how much
more flavorful the tofu will be.
