Chilled
Tomato-Orange Soup
In blender or food processor, combine tomatoes, juices, and
honey. Process until smooth. Strain through a sieve into a bowl
and discard solids. Add spice to bowl, mix well. Use water to
thin if necessary. cover and chill for at least an hour.
If
desired, top individual servings with dollops of sour cream
and cilantro for garnish. |
Ingredients
2 pounds tomatoes, cored and quartered
1/2c. tomato juice
1/4c. freshly squeezed orange juice
1 tsp. honey
1/4c. minced cilantro
1/4 tsp. white pepper
salt to taste
1/4
c. sour cream or soy sour cream
Cilantro sprigs for garnish (optional)
