Soy-Ginger &
Five Spice Turkey

Combine soy sauce and all spices and let stand in a bowl for 20 minutes to thicken.

Remove neck and giblets from the turkey. Wash turkey well, pat dry, season inside and out with salt and pepper. Pour half of the marinade over the turkey. Reserve other half for later use.

Place turkey on rack in roasting pan and pour 1 cup of water into bottom. Prepare foil tent to cover roaster. Spray underside of tent with non-stick cooking spray, place over turkey and seal sides. Roast at 325 degrees, basting every 15 minutes or so, until nicely brown and thermometer inserted into the deepest part of the thigh reads 180 degrees. (About 15 minutes per pound.)

Serve with reserved marinade as a dipping sauce.

Makes 12-14 servings.

Ingredients

1 (12lb) turkey
6 tbsp low-sodium soy sauce
1 tsp ground ginger
1 tbsp garlic powder
1 tbsp fresh basil, chopped
1 tsp fresh parsley, chopped
2 tsp Chinese 5 Spice Powder
2 tsp paprika
1/4 tsp pepper
salt, pepper to taste
water
