Violet Honey
Pour
honey into the top of a double boiler, or a bowl set over a
pan of simering water. Stir in the violets, cover and heat for
30 minutes. Remove from heat and leave to infuse for seven days.
reheat the flavored honey (easier to pour) then strain into
a jar.

Ingredients
1 cup clear honey
1/2c. sweet violet petals
NOTE:
For a variation on this recipe, use 3-4 sprigs
of rosemary or lavender leaves.
