Apple
& Wild Rice Cakes
Every
year I try out new recipes for Thanksgiving, and this
was my experiment for
Thanksgiving 2004. It became an instant favorite, sure to be
repeated next year. Then it occurred to me, it would also be
a great thing to make for a Hanukkah Party as a main course latke.
Exceptional flavor and consistency, although if the cakes aren't
sticking together well enough, you may need to add an additional
egg or egg white.
Combine
dry ingredients in a bowl. Mix well. add apples, zest and remaining
ingredients, and mix well.
Pat
two tablespoons of mix into a cake and fry on both sides until
brown and crispy.
Keep
finished pancakes warm in oven on cookie sheets lined with paper
towels until all pancakes are fried. Drain on paper towels. Serve
immediately.

Ingredients
1 cup
wild rice, cooked
1 cup white rice, cooked
1/4 c flour
1./2 tsp. gr. nutmeg
1 Granny Smith apple, cored and grated
1/4 cup walnuts (toasted)
1/4 cup pine nuts (toasted)
zest from one orange
1 tbsp. fresh chives, chopped
2 tbsp fresh rosemary, chopped
4 large eggs, or the equivalent of egg whites
olive oil for frying
salt
gr pepper
